The Story Behind the Brew
Named after the historic, high-lifting Lock 17 on the Erie Canal, this blend is engineered for balance, strength, and smooth transition. By pairing the dependable, large-bean structure of a classic Colombian Supremo with a carefully traceable, high-altitude lot from the smallholders of Caldono, Cauca, we’ve built a medium-dark roast that bridges rugged depth with refined sweetness.
The Component Breakdown
To achieve this deeply satisfying profile, we blend two distinct expressions of Colombian excellence:
The Backbone (Colombian Supremo): Colombia’s top export grade (Screen 17/18). These large, uniform beans roast exceptionally evenly, providing a low-acidity, heavy-bodied foundation characterized by toasted walnut, rich chocolate, and a clean, smooth finish.
The Elevation (Caldono, Cauca AA): Sourced from seven dedicated smallholder producers cultivating Castillo trees at 1,400–1,750 meters above sea level. Fully washed and meticulously processed, this AA-grade lot introduces a dense, syrupy sweetness and a layer of rounded fruit complexity that elevates the blend.
The Roast Profile & Tasting Notes
Brought to a precise medium-dark roast, these two coffees lock together perfectly. The intense heat coaxes the vibrant fruit of the Caldono lot into a rich, molasses-like sweetness, while pushing the Supremo into deep, velvety cocoa territory.
Aroma: Dark chocolate, roasted pecans, and brown sugar
Body: Full, syrupy, and round
Flavor Profile: Sweet upfront with a heavy undertone of baker's chocolate and toasted walnut, balanced by hints of stewed stone fruit and a warming, spice-toned finish.
Roaster's Note: Lock 17 is the ultimate crowd-pleaser that refuses to be boring. It is incredibly versatile—yielding a bold, comforting drip brew, standing up beautifully to cream, or pulling a rich, syrupy espresso with a thick, golden crema. Built tough, brewed smooth.
